Protein Muffin Mix

Mixture for development of high vegetable protein and high dietary fiber content pastry products (muffins and sponge cake).

It is an excellent combination of nutrients present in whole grain flours, legumes, seeds and fibers. The ingredients of which it is composed favor its physical-chemical (texture and retrogradation of starch), sensory (edibility) and microbiological properties, with a shelf life of 3 months for the finished product.
